Pumpkin Pie Cake (Makes one 13x9 Cake)
You will need for crust & filling & topping:
- 1 Box Duncan Hines Yellow Cake Mix
- 2 sticks butter, softened not melted.
- 4 eggs
- 1 large can pumpkin
- 1 cup brown sugar
- 2/3 c. milk
- 2 tsp. cinnamon
- dash salt
- 1/2 c. nuts (optional)
Crust:
Take 1 box yellow cake mix and remove 1 cup for topping.
Combine remaining cake mix, 1 stick of butter and 1 egg.
Press mixture into bottom of greased 13x9 pan.
Filling:
In large mixing bowl combine pumpkin, 3 eggs, 1/2 c brown sugar, 2/3 c. milk and 2 tsp cinnamon, dash salt. Mix well with electric mixer. Pour into pan over crust.
Topping:
Take the 1 cup of reserved cake mix and mix into that 1 stick butter, 1/2 cup brown sugar
and 1/2 c nuts. Topping will be crumbly. Sprinkle on top. Bake in 350 oven for 1 hour.
Stick knife in it to be sure it comes out clean not wet.
